Healthy chicken stew

healthy chicken stew
Chicken cooked with assorted vegetables and herbs

Ingredients
Chopped garlic                          1 tsp
Fresh rosemary leaves               2 – nos
Boneless chicken cubes            ½ cup
Oil                                            1 tbsp
Chicken stock                           1 cup
Blanched broccoli                      ½ cup
Chopped spinach                       ¼ cup
Pickled onions                           4 – 5 nos
Mustard sauce                          ½ tsp
Salt                                          to taste
For garnish
Parsley leaves                           as required

Method
Heat oil in a pan, add chopped garlic and sauté then add fresh rosemary leaves.

Then add boneless chicken add stir well.

Pour chicken stock and cover the pan and let it simmer on the gas.
Then chop the blanched broccoli and add to the pan with chopped spinach and mix well.

Add pickled onion, mustard sauce and salt then mix well.

Serve stew in a bowl and garnish with parsley leaves.
