Beetroot Hummus

Beetroot Hummus is a vibrant recipe that simple to prepare and bursting with flavour. Classic humus made with chickpeas, tahini, garlic, lemon and olive oil.

Ingredients
Lemon juice                              2 tbsp
Garlic cloves                             5 – 6 nos.
Tahini paste                              2 tbsp
Beetroot paste                          ½ cup
Boiled chickpeas                       1 ½ cup
Olive oil                                    1 cup to blend
Chapatti                                    2 nos.
Olives                                       7 – 8 nos.
Cucumber                                 1 no.
For garnish

Method
Take a blender, put lemon juice, garlic cloves, tahini paste and blend well.

Add chickpeas and slowly add oil and blend it.

Add beetroot paste and blend it again.

Now cut strips of chapatti.

Keep a green olive in the middle and roll it then put them in the skewers.

Cut cucumber, scoop the seeds then cut the cucumber lengthwise.

Keep the hummus in bowl and put oil on it.
Place hummus bowl on serving plate, place the prepared skewers with chapati with cucumber batons.

place hummus, cucumber and rolled chapati on plate 
Garnish with parsley leaves.
