Dhokar dalna

It is a delicious pure vegetarian dish, favourite to all. It is made with chana dal burfi in potato curry for 4. Best match with roti or paratha.

Ingredients
Dhoka powder                          250g
Potato                                      4 medium
Cumin seed                              1 teaspoon
Ginger                                      2 ½ inches
Yogurt                                      2 tablespoon
Red chilli powder                       2 teaspoon
Sugar                                       2 teaspoon
Salt                                          to taste
Oil                                            to fry
Ghee                                        2 tablespoon
Garam masala (optional)            1 teaspoon      

Method
First soak dhoka powder in 1 cup water with 1 teaspoon sugar and salt for 20 minutes.
In the mean time make a smooth paste of ginger. Cut potato in medium cube shape. Put yogurt in a bowl and whisk with 1 teaspoon sugar.

Heat ½ tablespoon ghee in non-stick pan. Add dhoka mixture, then stir and cook for 2 minutes in low flame or until become soft dough. Switch off gas oven.

Grease one flat plate by ghee, Put the dough on center of plate then press and spread over the plate,1 inch thick. Let it cool.

Now cut it by knife in shape of your choice. Heat oil in pan, slow down the heat and add all burfi. Deep fry them until brown. Remove and keep a side.

Add cube potato and fry till light brown. Remove and keep aside.
Remove oil from pan and heat 1 ½ teaspoon ghee in pan. Add cumin seed and stir, then add ginger paste and stir. Add yogurt and stir for 1 minute. Then add turmeric powder and chilli powder and stir. Now add fried potato and salt. Cover and cook for 2 minutes.

Open cover and add required water and salt (if required). Cover and cook for 7-8 minutes or until cook and make sure the gravy is thick. Stir in middle.
Open cover and add fried dhoka. Cook for a minute. Add garam masala (optional) and stir. The dhokar dalna is ready to serve.
