Chicken and Prawn Laksa

Laksa is a popular spicy noodle dish with a curry soup base from the Peranakan culture, which is a merger of Chinese and Malay elements found in Indonesia, Malaysia. Laksa is a spicy noodle dish that is popular in Malaysia and Singapore; it's.

Ingredients
Boneless chicken (cut into strips)           100 gms
Prawns                                                 12 medium
Chicken stalk                                        1 cup
Coconut milk                                         1 cup
Noodles boiled                                       1 cup
For laksa paste
Whole dry red chillies (soaked)                6
Shallots                                                 12
Garlic                                                    4 cloves
Turmeric powder                                     ½ tsp
Galangal chopped                                   I inch pieces
Roasted peanuts                                    2 tbsp
Salt                                                       to taste
Olive oil                                                 3 tbsp
For garnish
Bean sprouts                                         ½ cup
Fresh mint leaves chopped                      6
Onion sliced and deep fried                     1 small
Lemon  sliced                                        1
Lemon grass                                         1 stalk

Method
To prepare laksa paste
First remove the seeds from soaked dry red chillies and put into mixer jar, add 10 shallots, garlic, lemon grass, chopped galangal, peanuts, turmeric powder, salt, 1 tbsp oil, little water and grind in a smooth paste.

Heat 2 tbsp oil in a pan, add chicken and sauté.
Then add laksa paste and stir.

Now add chicken stock and let it boil.

Then add prawns and cook for a minute.

Add coconut milk and mix well.

Then cook till chicken and prawn both are done.
Now put the boiled noodles in serving bowl and pour the laksa over it.

Then top with bean sprouts, chopped shallots, fried onions, mint leaves, lemon slices and serve hot.

Tomato Soup

tomato soup 
Tomato soup is the most popular soup in Indian cuisine. This soup is very easy to make with easy available ingredients and is loved by all.

Ingredients
Bay leaf                                    2 nos.
Garlic cloves                             8 – 10 nos.
Sliced onion                              1 tbsp
Sliced carrot                             1 tbsp
Sliced tomato                           1 cup
All purpose flour                        2 – 3 tbsp
Water                                       as required
Butter                                       1 – 2 tsp
Sugar                                       ½ tsp
Soup cube                                1 tsp
Salt                                          to taste
Crushed black peppercorn          to taste
For garnish
Fresh cream
Puffed rice
Coriander leaves

Method
Heat oil in a pan, add bay leaf, garlic cloves, sliced onion and sauté.
Then add sliced carrot, sliced tomato then stir and add all purpose flour and mix well.

Add water then mix well.
Now blend this tomato mixture well.
Then heat butter in another pan, pour the blinded puree.

Add sugar, salt, sugar cubes, crushed black peppercorn and boil it.

Then strain it in a bowl.

Serve the prepared soup in a bowl.

Now garnish with fresh cream, puffed rice and coriander leaves.

Mushroom Soup

mushroom soup 
Mushroom Soup is all-time favourite. Mushroom becomes even more desirable with the addition of oregano. It is easy and quick to make.

Ingredients
Roughly chopped mushroom      1 cup
Finely chopped garlic                 1 tsp
Finely sliced onions                   1 – 2 tsp
Sliced carrot                             1 cup
All purpose flour                        1 tbsp
Water                                       as required
Soup cube                                1no.
Black pepper powder                  to taste
Salt                                          to taste
Oregano                                   ½ tsp
Oil                                            as required

Method
Heat oil in a pan, add chopped garlic, sliced onion, sliced carrot and sauté.

Then add chopped mushrooms and mix well.

Add all purpose flour and mix well.

Add water, soup cube and cook.

Once it is cooked let it cool and put into blender and blend well.

Then pour the mixture in a pan, boil it with required water and add salt and black pepper powder, origano.

Lauki ka Stew / Bottle Gourd Stew

lauki ka stew / bottle gourd stew 
It is a simple, tasty and healthy stew of bottle ground with whole spices flavoured coconut milk.

Ingredients
Diced bottle gourd                     ½ kg
Diced parboiled potato               1 no.
Coconut milk                             2 cups
Green cardamom                       4 nos.
Cinnamon stick                         1 no.
Black peppercorn                       few
Cloves                                      4 – 5 nos.
Sliced onion                              1 no.
Chopped garlic                          1 tsp
Chopped ginger                         2 tbsp
Green chillies                            3 – 4 nos.
Curry leaves                              10 – 12 nos.
Salt                                          to taste
Oil                                            2 tbsp

Method
Heat oil in a pan, add cardamom, cinnamon, clove, peppercorn seed and sauté.

Then add onion and stir well until onion pink.
Add curry leaves, green chillies, chopped ginger and garlic and stir well.

Now add diced bottle gourd and potato and cook well.

Prawn Clear Soup

prawn clear soup 
It is a very simple prawn soup with vegetables and rice noodles.

Ingredients
Onion finely chopped                3 tsp
Garlic finely chopped                1 tsp
Green chilli finely chopped         1 tsp
Prawn stock                              1 cup
Soup cubes                              2 nos.
Sliced carrot                             1 cup
Chopped red yellow
bell peppers                              1 tbsp
Blanched mushroom                  6 – 8 nos.
Salt                                          to taste
Black pepper powder                to taste
Oil                                            3 – 4 tbsp
For garnish
Crushed black peppercorns

Method
First remove the heads and discard the veins of the prawns before cooking.

Heat oil in a pan and add finely chopped onion and sauté.

Then add finely chopped garlic and green chilli and stir well.

Now add prawn stock, soup cubes, salt, black pepper powder and stir well.

Add sliced carrot, chopped bell peppers and blanched mushrooms and cook.

Now add rice noodle and prawn then mix and boil it well.

Serve the prepared soup with vegetable salad and garnish with crushed black peppercorns.

Mexican Nachos Soup

Crispy fried naan juliennes in a tomato-based Mexican soup with kidney beans and corns and served with Nachos.

Ingredients
Chopped onion                          ¼ cup
Chopped garlic                          1 tsp
Chopped ginger                         1 tsp
Red chilli powder                       1 tsp
Cumin powder                           1 tsp
Boiled red kidney beans             1 cup
Corn                                         ½ cup
Chopped green chillies               1 tsp
Green olives                              ¼ cup
Tomato juice                             2 cups
Chopped celery                         1 – 2 tbsp
Salt                                          to taste
Oil                                            1 ½ tsp
For plating
Naan                                         as required
Oil                                            to fry
For garnish
Nachos                                     as required
Cheese                                     to taste
Coriander                                  1 spring

Method
Heat oil in a pan, add chopped garlic, chopped ginger, chopped onion and sauté.
Add red chilli powder, cumin powder and mix.

Now add boiled red kidney beans and mix well.

Add corn, chopped chillies and mix well.

Then add tomato juice, required water, salt and mix well.

Add chopped celery and let it boil.

Within this time chop naan into juliennes.

Fry them in hot oil and remove in a tissue.
Serve the prepared soup in a bowl and garnish with fried naan, nachos and coriander spring.

Apple Pumpkin Soup

Apples add just a hint of sweetness to this healthy velvety pumpkin soup. Try it as a delightful first course for a special meal served with garlic bread.

Ingredients
Chopped onion                          1 tbsp
Chopped garlic                          1 tsp
Chopped ginger                         1 tsp
Red chilli powder                       1 tsp
Turmeric powder                        1 tsp
Coriander powder                       1 tsp
Crushed black pepper                 to taste
Chopped apple                          1 cup
Salt                                          to taste
Oil                                            1 tsp
Chopped pumpkin                      1 cup
Oatmeal                                    1 – 2 tbsp
For garnish
Crushed black pepper                 to taste
Chopped celery                          1 tbsp
Parmesan cheese                       to taste
Garlic bread                               as required
Degi mirch                                 a pinch
Olive oil                                     as required
           
Method
Heat olive oil in a pan, add chopped garlic chopped ginger, chopped onion and sauté.
Then add chilli powder, turmeric powder, coriander powder, crushed black pepper and mix well.
Add chopped apple and stir well.

Add chopped pumpkin, salt and mix well.

Then add water and cover - cook for 5 – 7 minutes.

Open cover and keep aside some of this mixture in a small bowl for garnish.

Now blend the pan mixture with water.

Pour this stained soup in pan and boil.

Add oatmeal, crushed black pepper, chopped celery, parmesan cheese and salt and let it cook.

Remove the soup in a bowl.
Now mash the remaining pan mixture with parmesan cheese and chopped celery.

Then put the mixture in a ring mould and prepare a timber.
Place it in a soup bowl and serve garlic bread in a plate.

Pour the soup in the bowl from the sides of the timble and decorate with lemon wedge, degi mirch and celery.
