Baked garlic mushroom

baked garlic mushroom 
Very tasty and healthy dish of mushroom with garlic flavour which is very easy to prepare.

Ingredients
Mushroom sliced                       500gm
Bread crumbs                           1 cup
Thyme                                      1 tsp
Garlic cloves sliced                    7 – 8 nos.
Black peppercorn powder           1 tsp
Salt                                          to taste
Butter                                       1 tsp
Olive oil                                     2 tbsp

Method
First heat 1 tbsp olive oil and butter in a pan.
Add bread crumbs and roast on low flame till light brown, then keep aside.

Then heat remaining 1 tbsp olive oil in another pan, add sliced garlic and sauté.

Add thyme, black pepper corn powder and mix.

Now add sliced mushrooms, salt and toss a little.

Then take a baking tray and add the cooked mushroom and spread.

Now add the prepared roasted bread crumbs on mushrooms and spread.

Now bake it in 300 degree celsious microwave for 15 minutes or until the bread crumbs become dark brown.

The baked garlic mushroom is ready to serve.

Mushroom Soup

mushroom soup 
Mushroom Soup is all-time favourite. Mushroom becomes even more desirable with the addition of oregano. It is easy and quick to make.

Ingredients
Roughly chopped mushroom      1 cup
Finely chopped garlic                 1 tsp
Finely sliced onions                   1 – 2 tsp
Sliced carrot                             1 cup
All purpose flour                        1 tbsp
Water                                       as required
Soup cube                                1no.
Black pepper powder                  to taste
Salt                                          to taste
Oregano                                   ½ tsp
Oil                                            as required

Method
Heat oil in a pan, add chopped garlic, sliced onion, sliced carrot and sauté.

Then add chopped mushrooms and mix well.

Add all purpose flour and mix well.

Add water, soup cube and cook.

Once it is cooked let it cool and put into blender and blend well.

Then pour the mixture in a pan, boil it with required water and add salt and black pepper powder, origano.

Serve it in serving bowl and garnish it with fresh cream.

Mushroom Tomato Pizza

mushroom tomato pizza
Prepare pizza dough and topped with tomato, mushrooms and mozzarella cheese basil leaves.

Ingredients
Dry yeast                                   1 tsp
Sugar                                       1 tsp
Oil                                            1 tbsp
Finely chopped garlic                 1 tsp
Finely chopped onion                 4 tsp
Chopped tomatoes                    ½ cup
Chopped basil leaves                 few
Tomato puree                            ½ cup
Oregano                                   ½ tsp
Black pepper                            ½ tsp
Salt                                          to taste
Refined flour                              1 cup
Oil                                            3 tsp
Sliced tomato                            1 no.
Sliced mushrooms                     5 – 6 nos.
Mozzarella cheese                     as required
Basil leaves                               few
Oregano                                    ½ tsp

Method
In a bowl put dry east, sugar, water and mix then keep it aside for format.
Heat oil in a pan, add chopped garlic, chopped onion and sauté then add chopped tomato.
And tomato puree, chopped basil leaves.
Then add black pepper, salt, oregano and mix well and cook for 2 – 3 minutes on low flame.

Take a mixing bowl, put refined flour and add formatted east then knead to soft dough.

Rest it for few minutes.
Then roll it out and spread the tomato mixture over it.

Plan the sliced tomato on it.
Then place the sliced mushroom on tomato.

Add mozzarella cheese on top

Then add basil leaves on cheese.

 Bake it at 200 degree celsius for 10 minutes.

Mushroom Scallion Yakitori

mushroom scallion yakitori
Skewered grilled mushroom and scallion with brushed unique soya sauce mixture is popular in Japan. Scallions are considered younger than a green onion because they should not have a bulb.

Ingredients
Stem-less mushrooms               9 – 10 nos.
Spring onion                              4 – nos.
Sesame seeds                          a pinch
For sauce
Dark soya sauce                       ½ cup
Toasted sesame seeds              1 tsp
Powder sugar                            1 tsp
For garnish
Sesame seeds                          as required
Coriander                                  as required

Method
To prepare sauce
Heat water in a pan, add Japanese soya sauce, powder sugar, sesame seeds and let it simmer slowly.

Cut the stem-less mushrooms and scallion (spring onion’s white portion).

Then put the mushroom and scallion in the bamboo sticks (soaked in water for half an hour).

Now put this sticks on coal grill and frequently turn them.

Once grilled put them on prepared sauce and brush sauce on them.

Then place them on the serving plate and pour some sauce on top and sprinkle sesame seeds.

Mushroom & Potato Pierogi

Pierogi are dumplings of unleavened dough – first boiled, and then they are baked or fried usually in butter, traditionally stuffed with potato filling. Pierogi is Eastern European version of stuffed dough.

Ingredients
For filling
Mushrooms                               8 – 9 nos
Potatoes boiled                          3 nos
Finely chopped onion                 2 – 3 tbsp
Salt                                          to taste
Crushed black pepper                to taste
Butter                                       1 tbsp
For dough
All purpose flour                        2 cup
Cream cheese                           2 tbsp
Yogurt                                      1 tbsp
Butter                                       2 tbsp
Salt                                          to taste

Method
In a pan, heat oil and add onion and sauté. Then add crushed black pepper, chopped mushroom and stir well.
Now add chopped boiled potato and butter and mix well.

For dough in a bowl add all purpose flour, cream cheese, yogurt, butter salt and whisked eggs then mix well with required water and make dough.
Now roll out the dough and with the help of cutter, cut it in medium round.

Then stuff it with prepared filling and seal it with butter.
Heat water in a pan and boil pierogi for 1 – 1 ½ minutes.
Now in another pan heat olive oil and fry the boiled pierogi from both sides till light brown.

Mushroom duplex

It is a simple Delhi snack of stuffed mushrooms with healthy spinach and celery and present with dip made from mayonnaise, cheese and mustard.

Ingredients
Mushrooms                              8 – 10
Salt                                         to taste
Crushed black pepper               to taste
Refined flour                            4 tbsp
Bread crumbs                          as required
Oil                                          for frying
For stuffing
Oil                                          1 tbsp
Chopped garlic                         1 tbsp
Chopped onion                         2 tbsp
Chopped celery                        2 tbsp
Salt                                         to taste
Crushed black pepper               to taste
Boiled and chopped spinach     ½ cup
Nutmeg powder                        a pinch
Chopped spring onion               1 tbsp
Grated cheese                         ¼ cup
For batter
Refined flour                             ½ cup
Egg                                         1 no
Red chilli powder                      1 tsp
Salt                                         to taste
For dip
Mayonnaise                              ¼ cup
Grated cheese                          1 tbsp
Mustard paste                          1 tsp
Red chilli powder                      1 tsp
Basil leaves                              4 – 5 nos
Oil                                           1 tsp
For garnish
Red chilli powder                       as required
Tomato wedges                         1 no

Method
For stuffing
Heat oil in a pan, add chopped garlic, chopped onion and stir.
Add chopped celery, spinach and mix well.

Add chopped spring onion, salt, black pepper, nutmeg powder and mix well.

Then add grated cheese and stir well.

Now scoop out mushrooms, stuff with the prepare fillings.

With the help of toothpicks joint two stuffed mushrooms.
Then put these mushrooms in a bowl and marinate with salt and crushed black pepper.

For dip
In a bowl add mayonnaise, grated cheese, mustard paste, red chilli powder, chopped basil oil and mix well.

Now add some refined flour into marinated mushroom bowl then coat well and remove from bowl.

For batter
Now with this remaining flour in the bowl, add egg, red chilli powder, water, salt and mix well.

Mix the stuffed mushrooms in this batter and coat with the bread crumbs.

Heat oil in a pan, and deep fry the mushrooms.

Remove on tissue.

Now cut the fried mushrooms in half.

Sprinkle red chilli powder and one wedge of tomato, garnish with dip and serve.

Hara Dhaniyawala khumb

hara dhaniyawala khumb
The delicious mushroom dish cooked with fresh coriander leaves and other ingredients.

Ingredients
Button Mushrooms                   200 gm
Onion chopped                         1
Ginger garlic paste                    2 tsp
Green chillies chopped              3
Red chilli powder                       ½ tbsp
Coriander powder                      1 tbsp
Garam masala powder               1 tbsp
Curd                                         2 tbsp
Coriander leaves chopped          1 cup
Salt                                          to taste
Oil                                            2 tbsp

Method
First heat oil in a pan, add chopped onion and sauté till it gets brown.

Add ginger-garlic paste and stir.

Add chopped green chilli, red chilli powder, coriander powder, garam masala powder and mix well.

Then add sliced mushrooms then stir and cook until it gets soft on medium flame.

Now add curd, salt and stir well for 2 minutes.
