Coconut Rice

This delicious South Indian styled coconut rice is very easy to make & tastes mind blowing if you have fresh coconut. Coconut rice is a dish prepared by soaking white rice and cooking it within coconut milk with coconut flesh. Coconut Rice is a very simple recipe and can be done by everyone.

Ingredients
Ghee                                        1 tbsp
Cashew nuts                             4 – 5 nos.
Raisins                                     8 – 10 nos.
Jaggery                                    1 tbsp
Sliced coconut flesh                  1 cup
Soaked rice                              1 cup
Coconut milk                            1 cup
Water                                       as required
For garnish
Dried grated coconut
Roasted curry leaves
Green chilli
Raisins
Cashew nuts

Method
Heat ghee in a pan, add cashew nuts, raisins and stir.

Then add jaggery and mix well.

Add sliced coconut flesh and stir well.

Add soaked rice and mix.

Then add coconut milk, some water and cover the lid and cook until done.

Open the lid and move the rice.

Now serve the rice in coconut shell.
Garnish with grated coconut, roasted curry leaves, green chillies, cashew nut and raisins.

Rice croquettes

rice croquettes 
Ever cooked too much rice? Well, put the extra rice in the fridge and the day after convert it in delicious, crispy rice croquettes and serve it with yummy salsa sauce.

Ingredients
For rice mixture
Boiled rice                                1 cup
Boiled corn                               2 tbsp
Chopped coriander                    2 tbsp
Chopped green chillies              1 tsp
Chopped onions                        1 ½ tbsp
Salt                                          to taste
Roasted cumin powder              1 tsp
Red chilli powder                       1 tsp
Grated cheese                           2 tbsp
Grated paneer                            2 tbsp
Bread crumbs                            2 tbsp
For sauce
Chopped onion                          2 tbsp
Chopped tomato                        ½ cup
Chopped green chilli                  1 tsp
Chopped garlic                          1 tsp
Orange zest                              1 tbsp
Sugar                                       1 tbsp
Black olives                               4 – 5 nos.
Lemon                                      1 no.
Salt                                          to taste
Crushed black pepper                to taste
Red chilli powder                       1 tsp
Refined flour                              to dust
Bread crumbs                            to coat
Oil                                            to fry
For garnish
Lettuce leaves                            2 – 3 nos.
Black olives                               few

Method
To prepare rice mixture
Take a bowl, put boiled rice and mash it.
Then chop the boiled corn and add into rice.
Add chopped onion, chopped green chillies, chopped coriander, roasted cumin powder, red chilli powder, grated cheese and paneer.

Then add bread crumbs (for binding), salt and mix well.

To prepare salsa sauce
Take a mixing bowl, add chopped onion, chopped tomato, chopped coriander, chopped green chillies, chopped garlic, orange zest, sugar and mix well.

Now chop black olives and add to the add to bowl, add lemon juice, salt, crushed black pepper then mix well and keep aside.

To prepare batter
In a bowl, mix refined flour, salt, chilli powder, crushed pepper, water and make a batter.

Now make balls out of the rice mixture and coat with refined flour.

Then put the balls in batter and then coat them with bread crumbs.
Now deep fry the prepared croquettes in hot oil until golden brown and remove them on tissue.

Serve salsa sauce in a bowl and keep it on serving plate.

For garnish
Trim the lettuce leaves and keep on serving plate.

Place the prepared croquettes on plate and arrange black olives on the skewers and place on croquettes.

Steamed Dolmas

Grape leaves are filled with a mixture of rice, onions, currants, pine nuts, mint and spices then gently steamed. Serve chilled, as is traditional, or warm. Here Dolmas (stuffed grape leaves origin from middle east) are prepared with cabbage leaves and slightly roasted in olive oil.

Ingredients
Cumin seeds                             ½ tsp
Steamed rice                             1 cup
Black raisins                             1 tbsp
Salt                                           to taste
Crushed black pepper                 to taste
Tomato sauce                           1 cup
Cinnamon powder                      1 pinch
Lemon juice                              1 tsp
Chopped dill leaves                    1 tbsp
Cabbage leaves                         2 nos.
Oil                                            to roast
For garnish
Tomato sauce                           as required
Cinnamon powder                      as required
Black onion seeds                     1 pinch
Soya leaves                               as required

Method
To prepare filling
Heat oil in a pan, add cumin and stir.
Then ass steamed rice and mix well.

Add salt, crushed black pepper and tomato sauce and mix well.

Then add cinnamon powder, lemon juice in it and cook well.

Add chopped dill leaves and mix well.

To prepare roll
Now cut the middle portion of cabbage.

Then put the filling on it and roll it.

Heat oil in a pan, put the rolls on it and slightly roast them all sides.

Now decorate tomato sauce on a serving plate and place the dolmas on it.

Then sprinkle the cinnamon powder and black onion seeds and garnish with soya leaves.

Exotic Tiranga Rice

Cooked basmati rice 3 times with 3 colourful vegetables and arranged in tree coloured layers.

Ingredients
Boiled basmati rice                    1 big bowl
Ghee                                        6 tsp
Cumin seeds                             1 ½ tsp
Salt                                           to taste
For green layer
Ghee                                         2 tbsp
Chopped green chillies                ½ tsp
Chopped spinach                        1 medium bowl
Blanched green peas                  1 small bowl
For orange layer
Grated carrot                              1 small bowl
Curry powder                              1 tsp
For white layer
Grated cheese                            1 tbsp
For garnish
Cashew nut
Raisin

Method
To prepare green layer
Heat 2 tbsp ghee in a non-stick pan, add ½ tsp cumin seeds, chopped green chillies, chopped spinach and stir.

Then add blanched green peas and mix well then add 1/3 rice, salt and mix well.

Remove and keep in a bowl.
To prepare orange layer
Heat 2 tbsp ghee in same pan, add ½ tsp cumin seeds, grated carrot and mix well.

Add half or remaining rice, salt and mix well.

Add curry powder and mix well.

Now put some cashew nut and raisins on green layer.

Then put the orange rice on it.

For white layer
Heat ghee in a pan, add ½ tsp cumin seeds, remaining rice, cheese, salt and mix well.

Add white rice mixture on it.

Now keep serving plate on rice bowl and flip the bowl.

Pineapple fried rice

pineapple fried rice
It is a delicious and easy-to-follow pineapple fried rice preparation, try it.

Ingredients
Cooked basmati rice                 1 bowl
Medium prawn headless            10 – 12
Chopped pineapple                   2 tbsp
Carrot finely chopped                2 tbsp
Red bell pepper diced               1 tbsp
Chopped onion                         1 tbsp
Onion tree white portion             1 tbsp
Chopped garlic                         1 tsp
Chopped ginger                         ½ tsp
Alpino chilli diced                      1 tsp
Curry powder                            1 tsp
Soya sauce                              1 tsp
Sugar powder                           ½ tsp
Salt                                          to taste
Vegetable oil                             2 tbsp

Method
Heat oil in wok, add onion, garlic, ginger and sauté then add alpino.

Add finely chopped carrot and mix well.

Add diced red bell pepper and stir well.

Now add prawn and spring onion white portion and cook well.

Add curry powder, salt, sugar powder and soya sauce then mix well.

Then and cooked basmati rice and toss well.
