Chicken and Prawn Laksa

Laksa is a popular spicy noodle dish with a curry soup base from the Peranakan culture, which is a merger of Chinese and Malay elements found in Indonesia, Malaysia. Laksa is a spicy noodle dish that is popular in Malaysia and Singapore; it's.

Ingredients
Boneless chicken (cut into strips)           100 gms
Prawns                                                 12 medium
Chicken stalk                                        1 cup
Coconut milk                                         1 cup
Noodles boiled                                       1 cup
For laksa paste
Whole dry red chillies (soaked)                6
Shallots                                                 12
Garlic                                                    4 cloves
Turmeric powder                                     ½ tsp
Galangal chopped                                   I inch pieces
Roasted peanuts                                    2 tbsp
Salt                                                       to taste
Olive oil                                                 3 tbsp
For garnish
Bean sprouts                                         ½ cup
Fresh mint leaves chopped                      6
Onion sliced and deep fried                     1 small
Lemon  sliced                                        1
Lemon grass                                         1 stalk

Method
To prepare laksa paste
First remove the seeds from soaked dry red chillies and put into mixer jar, add 10 shallots, garlic, lemon grass, chopped galangal, peanuts, turmeric powder, salt, 1 tbsp oil, little water and grind in a smooth paste.

Heat 2 tbsp oil in a pan, add chicken and sauté.
Then add laksa paste and stir.

Now add chicken stock and let it boil.

Then add prawns and cook for a minute.

Add coconut milk and mix well.

Then cook till chicken and prawn both are done.
Now put the boiled noodles in serving bowl and pour the laksa over it.

Then top with bean sprouts, chopped shallots, fried onions, mint leaves, lemon slices and serve hot.

Grilled Prawns in Butter Garlic Sauce

Grill the marinated prawn in butter garlic and serve with butter garlic sauce with bell peppers.

Ingredients
For marinating
King prawns                              5 nos.
Butter                                       1 tbsp
Salt                                          to taste
For sauce
Finely chopped garlic                 1 tbsp
Crushed black peppercorns         to taste
Butter                                        4 – 5 tbsp
Finely chopped garlic                  4 – 5 tbsp
Finely chopped spring onion
leaves                                        1 cup
Red green yellow bell
pepper juliennes                          1 cup

Method
Take a mixing bowl, add butter, finely chopped garlic, salt, crushed black peppercorn, prawn and mix well and keep aside.

Heat the grill pan, add the marinated prawns and roast from all sides.

Heat a non-stick pad, add butter, finely chopped garlic and stir well.

Add finely chopped spring onion leaves, red green yellow bell pepper juliennes and sauté well.

Place the roasted prawns on serving plate.

Now pour the prepared mixture on the roasted prawns.

Prawn Masala

Prawn Masala is a simple yet delicious and it just taste yummy with Indian spices. It can be made with skinless, boneless chicken bits and it is just as yummy.

Ingredients
Washed prawns                       1 cup
Finely chopped onion                ½ cup
Ginger garlic paste                    2 tbsp
Finely chopped green chilli        1 tsp
Finely chopped tomato              1 cup
All ground spice                        1 tsp
Coriander powder                      1 tsp
Red chilli powder                       ½ tsp
Kokam                                      3 nos.
Oil                                            4 – 5 tbsp
Salt                                          to taste
Water                                       as required
For garnish
Sliced onion and chopped coriander leaves

Method
Heat oil in a pan, add finely chopped onion and stir well until golden brown.

Then add ginger garlic paste and stir well.

Add chopped green chillies and finely chopped tomato stir well.

Then add all ground spice, coriander powder, red chilli powder and cook well.
Add required water and mix well.

Now add kokam and mix well.

Add prawns and cook for 2 – 3 minutes.
Now place the sliced onion on serving plate and

Put the prepared prawn masala at middle.

Garnish with chopped coriander leaves.

Prawn Clear Soup

It is a very simple prawn soup with vegetables and rice noodles.

Ingredients
Onion finely chopped                3 tsp
Garlic finely chopped                1 tsp
Green chilli finely chopped         1 tsp
Prawn stock                              1 cup
Soup cubes                              2 nos.
Sliced carrot                             1 cup
Chopped red yellow
bell peppers                              1 tbsp
Blanched mushroom                  6 – 8 nos.
Salt                                          to taste
Black pepper powder                to taste
Oil                                            3 – 4 tbsp
For garnish
Crushed black peppercorns

Method
First remove the heads and discard the veins of the prawns before cooking.

Heat oil in a pan and add finely chopped onion and sauté.

Then add finely chopped garlic and green chilli and stir well.

Now add prawn stock, soup cubes, salt, black pepper powder and stir well.

Add sliced carrot, chopped bell peppers and blanched mushrooms and cook.

Now add rice noodle and prawn then mix and boil it well.

Serve the prepared soup with vegetable salad and garnish with crushed black peppercorns.

Pineapple fried rice

It is a delicious and easy-to-follow pineapple fried rice preparation, try it.

Ingredients
Cooked basmati rice                 1 bowl
Medium prawn headless            10 – 12
Chopped pineapple                   2 tbsp
Carrot finely chopped                2 tbsp
Red bell pepper diced               1 tbsp
Chopped onion                         1 tbsp
Onion tree white portion             1 tbsp
Chopped garlic                         1 tsp
Chopped ginger                         ½ tsp
Alpino chilli diced                      1 tsp
Curry powder                            1 tsp
Soya sauce                              1 tsp
Sugar powder                           ½ tsp
Salt                                          to taste
Vegetable oil                             2 tbsp

Method
Heat oil in wok, add onion, garlic, ginger and sauté then add alpino.

Add finely chopped carrot and mix well.

Add diced red bell pepper and stir well.

Now add prawn and spring onion white portion and cook well.

Add curry powder, salt, sugar powder and soya sauce then mix well.

Goan Prawn Curry

Goan prawn curry
The stunning prawn curry from Goa, cooked in special Goan curry paste, tamarind and coconut milk. Very easy to prepare within 30 – 35 minutes for 4 with white rice.

Ingredients
Prawn medium sized                  20 – 25 pieces
Lemon juice                              2 tbsp
Salt                                          to taste
Oil                                            2 tbsp
Coconut milk                             4 tbsp
Tamarind juice                           2 tbsp
For paste
Onion sliced                              1
Garlic cloves                             5 – 6
Ginger                                      1 inch
Turmeric powder                        ½ tbsp
Cumin powder                           1 tbsp
Coriander seeds                        1 tbsp
Red chillies                               3
Grated coconut                         ½
Curry leaves                              8 -10
For garnish
Coriander leaves

Method
Take prawns in a bowl, add salt, lemon juice then mix and keep aside.

To prepare the paste
Heat oil in a pan, add onion and stir then add chopped garlic.

Add red chillies and stir then add turmeric powder, cumin powder, coriander seeds and mix well.

Now add grated coconut then stir and mix well.

Put this mixture in a grinder with ginger and make a smooth paste.

Now again heat oil in a pan, add curry leaves.

Then add the prepared paste add cook well until oil gets separated from masala.

Let it boil.

Then add marinated prawns and cook for 2 – 3 minutes.

Now for more richness add coconut milk and mix well and cook for few seconds.

The Goan prawn curry in ready serve with coriander leaves.
