Stuffed tomato is the most popular stuffed
vegetable dish. Here it is made with roasted tomato and stuffed with noodle
mixture and top with cheese and pesto sauce.
Ingredients
Tomato 3 nos.
Oil 1

For stuffing
Finely chopped garlic 1 tsp
Finely chopped onion 1 tbsp
Carrot juliennes 1 cup
Chopped red cabbage 1 cup
Chopped mushrooms 1 cup
Capsicum juliennes 1 cup
Boiled rice noodles 1 cup
Tabasco sauce 1
tsp
Soup cube ½
tsp
Salt to
taste
Finely chopped coriander 1 tbsp
For garnish
Pesto sauce
Method
First cut a little portion of tomatoes and
scoop well.

Then heat oil in a pan and roast the tomatoes

To prepare the stuffing
Heat oil in a pan, add finely chopped garlic,
finely chopped onion and sauté.

Then add carrot juliennes and sauté.

Add chopped red cabbage, chopped mushroom and
mix well.

Then add capsicum juliennes and mix well.

Now add boiled rice noodles and toss well.

Add little salt, Tabasco sauce, soup cubes
and mix well.
Then add finely chopped coriander and mix and
remove from oven.

Now stuff the roasted tomatoes with noodle
