Raita Bar

3 types of raita is a simple preparation of beaten curds with Indian spices and top with pineapple, boondi and banana. best match with biryani.

Ingredients
Curd                                         1 cup
Coriander powder                       1 tsp
Cumin powder                            1 tsp
Black salt                                  1 tsp
Red chilli powder                        1 tsp
Sugar                                        1 tsp
For topping
Chopped pineapple                  
Boondi
Banana
Red chilli powder
Cumin powder
Almond flakes

Method
Take a mixing bowl, add curd, sugar, coriander powder, cumin powder, red chilli powder, black salt and mix well.

Take a serving plate with has tree parts.
put raita in 3 parts
In the first part put the curd mixture, add pineapple pieces and drizzle cumin powder.

In the second part put the curd mixture, add boondi and drizzle red chilli powder.

In the third part put curd mixture, add chopped banana and garnish with almond flakes.

Quick Fix Chicken Biryani

It is very simple & easy to prepare delicious chicken biryani by making layers of cooked flavourful chicken and rice and garnish with dry fruits.

Ingredients
Boiled basmati rice                    1 bowl
Boneless chicken                      250 gms
Fried onions                              few
Ginger garlic paste                    2 tsp
Sliced onions                            2 nos.
Tomato puree                           ½ cup
Kashmiri red chilli paste            1 tsp
Curd                                        2 tsp
Cumin powder                          1 tsp
Coriander powder                      2 tsp
Red chilli powder                      1 tsp
Turmeric                                  1 tsp
Ghee                                       4 tsp
Chopped coriander                    few springs
Chopped mint leaves                 few
Garam masala                          1 tsp
Fried cashew nuts                     few
Raisins                                     few
Salt                                          to taste

Method
Heat ghee in a pan, add onions, ginger-garlic paste and sauté.

Then add turmeric powder, cumin powder, coriander powder, red chilli paste and mix well.

Now add boneless chicken and stir well.

Add tomato puree and mix well.

Add some water and mix well then cover and cook for 7 – 8 minutes.
Open cover and add beaten curd, salt and stir well.

Add garam masala powder and mix well.

Now grease a big bowl with some ghee.
First add raisins, fried onion, fried cashew nuts, 2 pieces of cooked chicken, chopped coriander and mint to the base of the bowl.

Then make a layer of boiled rice and spread.

Then add half of cooked chicken on the rice layer and spread.

Make another two layers like this.

Now heat it in the oven for 5 minutes.
Then cover with serving plate and flip the bowl on plate.

Now remove the bowl and serve hot.

Penne Pasta and Red Bean Salad

It is a simple salad of penne pasta with olives, baked red beans and bell peppers and the creamy dressing give it a delicious taste.

Ingredients
Boiled penne pasta                   100 gms
Baked beans                             200 gms
Chopped red bell peppers           1 no.
Chopped yellow bell peppers      1 no.
Chopped green bell peppers       1 no.
Green olives                              few
Black olives                               few
Lettuce leaves                           1 bunch
Orange wedges
Walnuts                                    few
For dressing
Mayonnaise                              2 tbsp
Chopped parsley                       few leaves
Baked bean syrup                     1 cup
Mustard sauce                          1 tbsp
Tomato ketchup                        1 tsp
Salt                                          to taste
Black pepper                             to taste

Method
Take a mixing bowl, tear lettuce leaves and add to it, add boiled penne pasta and baked caned beans.

Then add chopped bell peppers, olives and mix well.

To prepare the dressing
Take another mixing bowl, add bean syrup, parsley, tomato ketchup, mustard sauce, mayonnaise and mix well.
Then add salt, black pepper powder and mix well.

Now add this prepared dressing to the pasta mixture and mix well.

Garlic Cheese Spread and Curd Dip

It is very easy to make garlic cheese spread at home. It is great on sandwich and with crisp. It can be stored in fridge for 3 weeks.
With it can make a yummy dip with it.

Ingredients
Butter                                       2 tbsp
Garlic powder                            ¼ cup
White pepper powder                 1 tsp
Vegetable oil                             3 – 4 tbsp
Grated cheese                           1 cup
Finely chopped garlic                 2 tbsp

Method
Take a blender, add butter, garlic powder, white pepper powder, vegetable oil, grated cheese and blend in a fine paste.

Then add chopped garlic and mix well with spoon.

Garlic cheese spread is ready.

Curd Dip

Ingredients
Salt                                          to taste
Black pepper powder                 to taste
Red chilli powder                       ½ tsp

Method
Pour this prepared garlic cheese spread in a bowl, add salt, black pepper powder, red chilli powder and mix well.

Serve with fried sweet potato wedges.

Moong Dal Hummus

Normally hummus made from chick peas here it made with golden gram.

Ingredients
Soaked moong dal                    200 gm
Tahini paste                              1 tbsp
Chopped garlic                         1 tbsp
Lemon juice                              ¼ tsp
Olive oil                                    400 gms
Red chilli powder                       1 tsp
Salt                                          to taste
For garnish
Green olives                              as required
Cucumber and carrot salad         as required
Olive oil                                     2 tsp
Red chilli powder                        a pinch
           
Method
First boil water and add the soaked moong dal into it, blanch for 1 to 1 ½ minutes.

Then stain it.

Take a mixer, add stained moong dal, tahini paste (if tahini paste is not available then use white sesame seed paste), chopped garlic, lemon juice and keep blending.

Now keep adding the olive oil and keep blending with the mixture.

Then remove the mixture in a bowl.
Add lemon juice, red chilli powder, salt in mixture and mix well.

Serve it in a bowl, keep olives in a bowl, place the cucumber and carrot salad.

Poha Crusted Sweet Potato

In Lucknow the potato tikki is very famous dish. Here the twist is tikki made of sweet potato and cook with flattened rice.

Ingredients
Boiled sweet potatoes               2 nos.
Chopped onion                         1 tbsp
Chopped ginger                        1 tsp
Chopped mint leaves                 1 tbsp
Chopped green chillied              1 tsp
Red chilli powder                       1 tsp
Cumin powder                           1 tsp
Flattened rice                            ½ cup
Refined flour batter                    as required
Salt                                          to taste
For garnish
Sweet potato chips                    as required
Coriander leaves                        as required

Method
To prepare the tikki
Take a mixing bowl, add mashed boiled sweet potatoes, add chopped onion, ginger, mint leaves, green chillies, red chilli powder, cumin powder and mix well.

Now make tikkis of the sweet potato mixture.

Then dip them in refined flour batter and coat with flattened rice and keep aside.

Heat oil in a pan, place the coated tikkis and cook them from both sides until light brown.

Now remove and place the prepared tikkis on serving plate.

Garnish with sweet potato chips and coriander chopped.

Pesarattu Waffle

A Telugu cuisine Pesarattu or childaa is crepe-like bread that is similar to dosa which is made with batter of green gram (moong dal).
A typical American breakfast waffle is a leavened batter or dough cooked between two plates, patterned to
give a characteristic size, shape and surface impression.
So here the waffle made in Indian style with green gram and served with pineapple mixture.

Ingredients
For waffle
Soaked rice                              1 cup
Soaked green moong                 1 cup
Asafoetida                                 ½ tsp
Finely chopped onion                 2 tbsp
Oil                                            1 tsp
Salt                                          to taste
For pineapple and tomato mixture
Oil                                            1 tbsp
Curry leaves                              7 – 10 nos.
Diced pineapple                         1 cup

Method
To prepare pesarattu batter
Take a mixer, add soaked rice, soaked green moong, asafoetida, salt and blend well.

Now remove this mixture in a bowl.

Then add salt, chopped onion and mix well.

Rest this mixture for 15 – 20 minutes.
To prepare pineapple tomato mixture
Heat oil in a pan, add curry leaves, diced pineapple, diced tomatoes, salt, lemonjuice and toss then off the oven.

To prepare waffle
Heat a waffle maker and put little oil then pour the batter in two portions and cover it.

Once cooked open the cover and remove them.
