Spanish Frittata with Green Chutney

It is a very good breakfast for egg lovers. This yummy dish is Very easy to prepare, so try it.

Ingredients
For frittata
Sliced potatoes                         ½ cup
Sliced onions                            ½ cup
Salt                                          to taste
Black pepper                             to taste
Olive oil                                    4 – 5 tsp
Eggs                                        6 nos.
Grated cheese                          3 tsp
Red & yellow bell pepper            ½ cup
For green chutney
Spring onion stalk                     ½ cup
Chopped coriander                    ½ cup
Chopped onion                          ¼ cup
Cumin powder                           1 tsp
Chopped ginger                         1 tsp
Lemon juice                              ½ tsp
Salt                                          to taste
Black pepper                             to taste
Oil                                            2 tsp

Method
For frittata
First heat olive oil in a pan
Add sliced onion and stir.

Add soaked sliced potatoes, salt, black pepper and little water to it and mix well.

Now add sliced red & yellow bell pepper and cook it until golden brown.

Within this time take eggs in a bowl, add salt, black pepper and beat them well.

Then add grated cheese and mix well.

Now pour and spread the whole egg mixture into pan (don’t mix it).

Cover and cook on low flame.

Move the pan slightly so that the eggs settle down.

For green chutney
Take a grinder, add spring onions, coriander, ginger, onion, cumin powder, lemon juice, salt, black pepper, water, oil and grind well.

Now flip the frittata carefully and cook for a while.

Remove and cut in 4 pieces and serve with green chutney.
