It
is a healthy breakfast, cooked paratha with soya nugget fillings and served
with achari pineapple
Ingredients
For
stuffing
Soya
nuggets 200 gm
Chopped
onion 4 tsp
Chopped
ginger 2 tsp
Chopped
green chillies 1 tsp
Chopped
coriander 2 tsp
Lemon
juice 2 tsp
Roasted
cumin powder 2 tsp
Garam
masala 2 tsp
Salt to
taste
Oil 2
tsp
White
butter 1 tbsp
For
the dough
Wheat
flour 300 gm
Roasted
cumin powder 1 tsp
Raw
mango powder 1 tsp
Salt to
taste
Carom
seeds ½ tsp
Oil 2
tsp
For
achari pineapple
Black
onion seeds ½ tsp
Pickle
paste 2 tsp
Pineapple
pieces 8 – 10 no
Method
For
stuffing
First
soak the soya nuggets then grind it.
Heat
oil in a pan, add ginger, chopped onion and stir it.
Add
garam masala, roasted cumin powder, salt, black pepper and mix well.

Now
add soya nuggets paste and cook on low flame with white butter.

Then
add coriander, green chillies and sauté.

Keep
it in fridge to cool.

For
dough
Take
a bowl, add wheat flour, salt, carom seeds, roasted cumin, raw mango powder,
oil and mix well.

Then
add required water and make dough. Let it rest for some time.
Make
small balls out of the dough then roll out.
After
roll out again make it ball.

Remove
the filling from the fridge and add filling into the balls and roll them tike
paratha.

Heat
little butter and oil on pan and cook paratha from both sides.

For
achari pineapple
Heat
butter in another pan, add black onion seeds, pickle paste, chopped pineapple
and mix well.

Now
remove it in a bowl with bamboo stick.

Cut
paratha in 4 pieces and serve with achari pineapple.
