Spinach tomato bhat

spinach tomato rice
Flavourful rice cooked in spicy vegetable stock and arranged within layer of spinach.

Ingredients
Spinach leaves  fresh                 20-25 small to medium
Basmati rice                              ½ cup
Cloves                                       4
Cinnamon a inch                        2
Cumin seeds                             ½ tsp
Coriander seeds                        ¼ tsp
Dry red chilli                              2
Onion diced                              1 tbsp
Tomato diced                            1 tbsp
Brown onion paste                     1 tbsp
Green chilli chopped                  1 tsp
Oil                                            2 tbsp
For garnish
Grated coconut            
Coriander leaves
Tomato

Method
First soak the rice in water for 30 minutes.
Heat oil in a deep pot, add cumin seed, coriander seed, dry chilli, clove, cinnamon and stir a bit.
Add onion and stir till pink then add tomato, chilli and stir for 1 minute.

Add water and stir.

Add brown onion paste and mix well.

When it will start to boil add soaked rice and salt, mix well.

Cover and cook on low flame for 8-10 minutes or until cook.
Take a bowl, make a layer of hot cooked rice.

Then make a layer of spinach leaves.

Continue this same process 6-7 times or till the bowl full.
Now top with grated coconut.

Garnish with tomato and coriander leaves and serve hot.
