Lavang latika

Lavang latika is a delicious Begali sweet. It is sweetened khoya with dry fruits encased in a crisp pastry and sealed with a clove, preparation time 20 minutes.

Ingredients

For the covering
Refined flour (maida)                 1 cup
Melted ghee                             3 tbsp
Saffron                                     a few

For filling
Grated mava                             3 tbsp
Chopped dried fruits                   2 tbsp
Sugar                                       1 tbsp
Cardamom powder                    ¼ tsp

For sugar syrup
Sugar                                       1 cup
Water                                       ½ cup

Other ingredients
Cloves (lavang)                         12
Ghee                                        for frying

Method

For the sugar syrup

Combine the sugar and water in a pan and simmer till it reaches a 1 string consistency.
Remove from the heat and keep warm.

For the filling
Take a bowl, put all the filling ingredients and mix well. Keep aside.

For the covering

Combine the flour, saffron and ghee in a bowl and make stiff dough using enough water and knead well.
Divide the dough into 12 equal portions.

Roll out each portion into a circle of 125 mm. (5") diameter.

How to proceed

Place 1 tablespoon of the filling at middle of the circle.

Then fold the ends and seal the edges using a little water.
Now insert a clove on top of the sealed edge.

Then deep fry in ghee over a slow flame until golden brown in colour.

Remove and drain on absorbent paper.
Then soak the lavang latikas in warm sugar syrup for about 2 to 3 minutes.
Drain and serve warm.
