chitol macher kalia
Delicious and Popular dish of Chitol fish from Bengal.

Ingredients
Chitol fish                                 2 big
Onion paste                              1 mediun
Ginger-garlic paste                    1 tsp
Tomato paste                            1 medium
Garam masala paste                  ½ tsp
(cinnamom ½ inch, clove 1,
 green cardamom 1)
Turmeric powder                        1 tsp
Cumin powder                           ½ tsp
Chilli powder                             ½ tsp
Green chilli                                2
Salt                                          to taste
Mustard oil                                2 tbsp

Method
First marinate the fish with ½ tsp turmeric powder and salt for 5 minutes.

Heat oil in a kadai.
Fry the chitol pieces carefully until light brown from both sides.

Then remove and keep aside
Now in the same oil, add onion paste and stir till pink in medium heat.
Add tomato paste and stir for a minute.
Then add ginger-garlic paste and stir well for 2 minutes
Now add turmeric powder, chilli powder and cumin powder and cook until oil separate from masala.

Add little bit of water and salt, then stir and cook for 2 minutes.
Now add fried fish.

Turn over them carefully then cover and cook for 4 to 5 minutes in low flame.
Open cover add garam masala paste mix and again cook for 2 minutes.

add garam masala and mix well
Remove and serve with hot rice.
