Shiter khichuri/Hotchpotch in winter

Khichuri/hotchpotch
It is a very popular dish all over India and  very healthy dish with all seasonal vegetables.

Ingredients
White rice or gobindobhog        ½ cup
Cauliflower small                       ½
Moong dal                                1 cup
Moosur dal                               ½ cup
Carrot                                       1 medium
Beetroot                                   1 small
Green peas                               2 tablespoon
Green chilli chopped                  1 teaspoon
Red chilli powder                       1 teaspoon
Turmeric powder                        1 ½ teaspoon
Potato                                      1 medium
Ginger paste                             2 teaspoon
Garlic chopped                         1 ½ teaspoon
Onion   chopped                       1 ½ tablespoon
Tomato chopped                       1 medium
Coriander leaves chopped          1 tablespoon
Bay leaves                                2
Dry chilli                                   2
Cumin seed                               2 teaspoon
Ghee                                        2 tablespoon

Method
First mix rice and dals in a bowl then wash, drain and keep aside.
Then cut carrot, beetroot in medium sized cube and cut potato in half, cut cauliflower in big florets.

Heat ghee in presser cooker add 1 bay leave, 1 teaspoon cumin seed, 1 dry chilli, ½ teaspoon chopped garlic, ½ tablespoon chopped onion and sauté.

Then add cauliflower, potato, beetroot, carrot and 1 teaspoon ginger paste, mix and cook for 2 minutes.
Add rice and dal mixture, stir for two minutes. Now add water, turmeric powder, salt and chopped chilli. Let it boil then Close the cover and cook for 4-5 minutes.

Heat ghee in pan add bay leave, dry chilli, cumin seed sauté then add 1 teaspoon chopped garlic, stir then add 1 tablespoon onion, stir until light brown. Add chopped tomato, stir till soft then add 1 teaspoon ginger paste, stir and add chilli powder, ½ teaspoon turmeric powder and stir.

Now pour cooked rice in pan and mix nicely. If required add some water, then add green peas let it boil. When it become dry add chopped coriander leaves. The yummy hotchpotch is ready. Serve hot with ghee.
