Masala dhosa

masala dhosa
It is a south Indian dish and very popular all over India. Now no need to go restaurant, we can make it in our kitchen.

Ingredients
Black mustard seed                   ½ teaspoon
Chana dal                                 1 teaspoon
Udar dal                                    1 teaspoon
Curry leaves                              few
Turmeric powder                        ½ teaspoon
Green chilli chopped                  ½ teaspoon
Boiled potato                             2 medium
Onion sliced                              1 medium
Coriander leaves                        few
Salt                                          to taste
Butter                                       as need
For batter:
White rice                                 1 cup
Udar dal                                    ½ cup
Fenugreek seed                        ½ teaspoon     
                                   
Method
For the batter:
Soak white rice, udar dal and fenugreek seed overnight, at morning drain and make a smooth paste with little water. Put the paste in a large bowl and add enough water to make Batter. Cover and keep it for few hours.

For the masala:
Now heat oil in pan, add mustard seed and sauté. Then add chana dal, udar dal, curry leaves, onion, turmeric powder and sauté for a minute. Add boiled chopped potato, chopped chilli and salt, mix and cook for 2-3 minutes. The masala is ready.

Heat up thick non-stick pan, now remove from heat and put ½ cup batter at center of the pan. Now using the back of a large spoon, spiral the mixture out to the edge of the pan (dhosa will spread evenly) then place on medium flame. As the round mixture starts to firm, drizzle melt butter over it and put masala in line. Now fold the dhosa.

Remove from pad and serve it with sambar and chatney.
