Murukku/chakli

Murukku is a traditional crispy snack of Tamil nadu, savoury Indian crunchy twists made from rice and urad dal flour.

Ingredients
Rice flour                                  1 cup
Black gram split (urad dal)          ½ cup
Unsalted butter                          1 tablespoon
Cumin seed                               ½ teaspoon
Black sesame seed                   ½ teaspoon
Hot oil                                      1 tablespoon
Warm water                               as required
Salt                                           to taste
Black pepper powder                 1 pinch
Oil                                            to fry

Method
First roast the rice in a warm dry frying pan without letting the color change. Wash and soak for about half an hour then drain and spread on a cotton cloth to absorb the excess moisture. Now grind to a fine powder and keep in a bowl.

Then broil the urad dal to light brown colour, cool and grind into a smooth powder then add to bowl and mix both flour.

Now heat oil in a pan. In the mean time add cumin seed, black sesame seed, butter, salt, black pepper powder and hot oil into the flour and make firm dough with warm water.

Put the dough into murukku maker and give the require shape on butter paper. Take them out from paper and put into hot oil.

Other process to make the murukkus: grease your fingers and take a little dough. Roll them between your palms to a tubular form. Form this roll into small circles, while twisting them along. Make two circles next to each other and press the ends into the circle to secure. If want to make two batches at a time then cover with a wet cloth to prevent them from drying.

Now and fry them in hot oil in batches. Take them on a plate and gently slide them into the oil and fry on both sides till it becomes light golden brown and crisp.
Drain and let it cool before serving them. Store in a dry air-tight container.
