Grilled Scampi On a Pomegranate Risotto bed

Valentine's special recipe for u
Sea food is nice and light and won’t make you feel sluggish after the meal

Ingredients
For the risotto
Risotto rice                              70g
Peeled pomegranate                 50g
Parmesan cheese                     25g
Onion (chopped)                       5-10g
Butter                                      1 tsp
Cream                                      2 tsp
Thyme                                      to taste
Salt                                          to taste
Pepper                                     to taste                        
Vegetable stock                        as required

Method
Heat a pan and put in the butter. Quickly add the onions and thyme and saute till the onions are very lightly done and the thyme starts to emit its flavor.

Next, add the risotto rice and lightly stir. Keep pouring in the vegetable stock till the rice softens. Put in the seasoning, cheese, cream and stir well. When cooked, removed from heat and decorate with pomegranate seeds, which adds a lovely red colour-the colour of love.

For Grilled Srampi

ingredients
Large prawns                            3 pieces
Garlic (chopped)                       10g
Thyme                                      2-3g
Butter                                       ½ tsp
Salt                                          to taste

Method
First shell and clean out the prawns. Marinate in butter, garlic and thyme for 15-20 minutes.

Grill the prawn flesh down and cover with lid in the mean time for softness. Once the prawns are tender enough, take off and pale over the risotto.
