Watermelon Rind Thalipeeth

Thalipeeth is a Maharashtrian pancake made using 3 kinds of healthy flours. Here the thalipeeth made with Juicy watermelon rinds white portion which offer a high dose of cirulline amino acid, which helps dilate blood vessels, improving blood circulation.



Ingredients
Watermelon skin (white portion)
Grated                                      1 ½ cup
Rice flour                                   2 tbsp
Water chestnut flour                   2 tbsp
Amaranth flour                           2 tbsp
Refined flour                              2 tbsp
Shahi cumin seeds                    1 ½ tsp
Green chillies finely chopped      2 tsp
Boiled peanut paste                   2 tbsp
Deshi ghee                                2 tbsp
Curd                                         2 tbsp
Oil                                            2 tsp
For compliment
Deshi ghee                                3 – 4 tbsp
Chopped green chillies               2 tbsp
Boiled peanut paste                   2 tbsp
Lemon                                      2nos

Method
Take a mixing, add grated water melon skin (white portion).

Then add shahi cumin, all types of flours and mix well.

Now add chopped chilli, boiled peanut paste, ghee, curd and mix well.
add all other ingredients with ghee
Add oil and again mix well.

Now take two plastic sheets and grease with oil.
Now put some portion of mixture on it and cover with othe plastic sheet then gently press and give a flat round shape.
Heat ghee on a pan then remove the thalipith from plastic and transfer on hot ghee.

Roast it from both sides until golden brown.

Now remove it and keep aside.
To prepare compliment
In the same hot pan, add chopped green chillies, boiled peanut paste (without oil), salt and mix well.

Then cut lemons in 4 pieces and add the chilli mixture on them.

Now cut the thalipith in 4 parts and place on serving plate.

Serve the compliment beside it and serve.
