Lau r paneerer payes/lauki aur paneer ki kheer/bottle gourd pudding

It is a traditional Indian healthy pudding of pumpkin cooked in milk with paneer.

Ingredients
Bottle gourd grated                    300 gm
Saffron powder                           ½ tsp
Milk                                          1 liter
Rice flour                                   2 tbsp
Paneer grated                            2tbsp
Green Cardamom crushed          2
Pistachio chopped                     1 tsp
Cashewnut & almonds               1 tsp
Sugar                                       ½ cup

Method
First peel bottle gourd, cut in half then remove the seeds. Then wash and grate.
Boil milk in a deep non-stick pot then add rice powder, mix well and cover-cook for 2 minutes.
Then simmer and add cardamom powder, saffron powder and mix well.
Now add grated bottle gourd and mix, then stir and cook till it is reduce to three forth.
Add pistachio, cashewnut and almond then stir well.
Now add sugar and grated paneer (cottage cheese) and mix well and cook till sugar dissolves and payes (kheer) is semi-thick.

Garnish with pistachio, almond and cashewnut then serve hot or cold.
