oatmeal & herb bread |
Healthy herb bread made with a mixture of wheat and refined
flour, oatmeal and olive, cooking time 40-45 minutes, serving for 4.
Ingredients
Oatmeal

1/4 cup

Refined flour (maida)
|
2 1/2 cups
|
Whole wheat flour (atta)
|
1 1/2 cups
|
Fresh yeast
|
13 grams
|
Sugar
|
1 tablespoon
|
Salt
|
1 1/2 teaspoons
|
Garlic crushed
|
2-3 cloves
|
Oil
|
2 tablespoons
|
Spring onions with greens chopped
|

Parsley chopped
|
2 tablespoons
|
Black peppercorns crushed
|
3-4
|
Black olives sliced

|
Method
Place
the refined flour and whole wheat flour in a bowl and mix. Add salt to the
flours and mix. Add garlic and mix.
Dissolve
yeast in little water.

Make
a well in the centre of the mixture and pour the yeast solution in it. Then
cover with the flours and mix gently.
Add
sufficient water and knead well into soft dough. Mix in a little oil and cover
the dough with a damp cloth. Set aside to ferment (prove) until it doubles in
volume.
Now
add spring onions, parsley, black peppercorns and knock back the dough mixing
the ingredients well into it. Set aside to rise for about 15-20 minutes.

Grease
your hands and shape the dough into a rectangle and keep it in the rectangle
bread mould. The mould should be only half filled with the dough.
Now
sprinkle oatmeal on the surface and top it up with olive slices. Keep aside the
mould till the dough rises once again and reaches the top of the mould.

Preheat
the oven to 220 degree centigrade and bake for about forty five minutes or till
the bread is completely cooked.
Leave
it on a wire rack to cool in room temperature. Bread is ready so slice and
serve.
