Fried rice (basic)

It is a basic recipe for fried rice that you can add to as desired. If you want to add other ingredients, increase the number of eggs to 3-4.

Ingredients
Green onions                            1 - 2 as desired
Eggs                                        2 large
Salt                                         1 teaspoon
Pepper                                     to taste
Oil for stir-frying                        4 tablespoons or as needed
Cold cooked rice                       4 cups
Light soy sauce or oyster sauce 1 - 2 tablespoons as desired

Method
First wash and finely chop the green onion. Then lightly beat the eggs with the salt and pepper.
Now heat a wok or frying pan and add 2 tablespoons oil. When the oil is hot add the beaten eggs. Cook and stir until they are lightly scrambled but not too dry .Then remove the eggs and clean out the pan.

Add 2 tablespoons oil in pan. Add the cooked rice. Then stir-fry for a few minutes, using a wooden spoon or chopsticks to break it apart. Now stir in the soy sauce or oyster sauce as desired.

When the rice is heated through, add the scrambled egg back into the pan and mix thoroughly with rice. Now stir in the green onion. Serve hot.
