Healthy
breakfast cooked with vegetables and boiled eggs.
Ingredients
Boiled eggs 4
Oil 1
tbsp
Chopped ginger 1 tsp
Chopped carrot 2 tbsp
Chopped onion ¼ cup
Chopped tomatoes ¼ cup
Chopped spring onion stalk 2 tbsp
Red chili powder 1 tsp
Turmeric powder ½ tsp
Garam masala powder 1 tsp
Black pepper powder to taste
Chopped green chilies 1 tsp
Green chutney 2 tbsp
Egg yolk 1
Salt to
taste
For garnish
Lettuce leaves as required
Bun 1
Chopped coriander leaves as required
Ketchup as
required
Boiled egg yolks as required
Method
First separate the boiled egg yolks from
egg white and dice the egg whites.

Heat oil on a pan, add chopped ginger,
chopped carrot and saute.

Then add chopped onion, chopped tomato,
chopped spring onion stalk, red chili powder, turmeric powder, garam masala
powder, black pepper powder, chopped green chili and mix well.

Add green chutney and mix well.

Now Separate egg yolk from one egg and add
to the pan and mix well. Further add salt and mix well.

Then add diced egg white and mix well.

On serving plate place lettuce leaves and
add the prepared boiled egg bhurjee on this.

Garnish with chopped coriander and leftover
boiled egg yolks.
Cut the bun and place lettuce leaves in it.
Place this on the plate.

Decorate the plate with ketchup. .
