Masala yam fries

Masala yam fries
Ingredients
Half boiled yam                         500g
Salt                                          to taste
Turmeric powder                        ½ tsp
Red chilli powder                       1 tsp
Oil                                            3 tbsp
Lemon juice                              ½ no.
Oil to pan sear                          1 ½ tbsp
For masala
Oil                                            2 tsp
Mustard seed                            1tsp
Slit red chilli                              4-5 nos.
Curry leaves                              6-7nos
For garnish
Mayonnaise                               2 tbsp
Red chilli powder                        ½ tsp 

Method
First half boil yam, then cut into long fingers.
Take a bowl, add chopped yam, turmeric powder, chilli powder, salt, lemon juice and oil, mix well and keep aside.

Heat oil in pan and saute them from both sides till light brown.

Make masala
Now heat oil in another pan, add mustard seed, slit red chilli, curry leaves, some leftover marinade oil, cooked yam, salt, crushed black pepper and chopped coriander leaves and sauté.

Now in a plate put mayonnaise, some leftover marinade oil and mix, add chilli powder and again mix.

Add the mayonnaise mixture on serving plate, sprinkle red chilli powder and place the masala yam one by one and add the left over masala.
