Ingredients
Cauliflower 1 medium
Potato 4
medium
Green peas 200g
Ginger 1inch
Cumin seed 1 ½ teaspoon
Coriander seed 1 teaspoon
Green chilli 2
Dry red chilli 2
Yogurt 2
tablespoon
Turmeric powder 1 teaspoon
Cumin powder ½
teaspoon
Salt to
taste
Sugar 1
teaspoon
Method
First clean and cut the potatoes into quarters
and cut the cauliflower into medium sized florets. Now take ginger, coriander
seed, cumin seed and dry red chilli put into a mixer jar, grind
to a fine paste.
Now heat up oil
in a pot and when very hot fry the potatoes lightly, remove and keep aside.
Then in the
same oil fry the florets of cauliflower till they turn a little brown, remove
and keep aside.
Now take off
the oil.
In the same pot
heat up ghee add sugar, when suger become red add bay leaves and cumin seeds
and stir for 30 seconds on medium heat.
Now add the masala
paste and stir for a minutes taking care that the masala does not stick to the
bottom. Now add turmeric powder and cumin powder and stir again for a minute.
Rinse the
mixture jar with 1 tablespoon water and pour into cooked masala and stir.
Add the
potatoes and mix with the masala nicely. Cover and cook for 2-3 minutes in low
heat.
In the mean
time take yogurt in a bowl add ½ teaspoon sugar and whisk.
Open the cover and
add yogurt and stir then cover for 2 minutes.
Open cover and add
a cup of water stir then add cauliflower.
Add salt,
sliced green chilli and peas stir, then cover and cook in over medium heat for 2-3
minutes.
Stir from time
to time.
Add garam
masala powder (optional) stir and cook for ½ minute, switch off heat when the
vegetables are cooked and nearly dry. The yummy fulkopi aloor dalna is ready to
serve.
